For the Base:
½ cup ragi flour
½ cup rice flour
¼ cup soaked sabudana (crushed)
¼ cup sooji
½ cup curd (yogurt)
Salt to taste
Water as needed
½ tsp baking soda (optional for fluffiness)
For the Toppings (customize as you like):
Tomato sauce or homemade chutney
Chopped onions, capsicum, tomatoes
Grated paneer or mozzarella
Oregano, chili flakes, and herbs of your choice
1. Prepare the Base Batter:
In a bowl, mix all flours, crushed sabudana, salt, and curd. Add water gradually to make a smooth, spreadable batter. Let it rest for 10–15 minutes.
2. Cook the Base:
Heat a non-stick pan or tawa, pour the batter like a pancake, and spread it in a circular shape. Cover and cook until it firms up.
3. Add Toppings:
Spread your sauce, add veggies, cheese, and seasonings.
4. Final Cooking:
Cover again and let it cook on low flame until the cheese melts and base turns slightly crispy.
Add a pinch of chaat masala or peri-peri for an Indian twist.
You can make it completely vegan by using plant-based yogurt and cheese.
Serve hot with mint chutney or garlic dip!
