500g mutton (bone-in pieces preferred)
2 tbsp oil or ghee
1 large onion, sliced
2 tomatoes, chopped
1 tbsp ginger-garlic paste
2 green chilies (optional)
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala
Salt to taste
2 cups water or stock
Fresh coriander leaves (for garnish)
Optional vegetables: carrots, potatoes, green peas
Heat oil in a heavy-bottomed pot or pressure cooker. Add sliced onions and sauté until golden brown. Add ginger-garlic paste and cook for 1–2 minutes until the raw smell disappears.
Add chopped tomatoes, turmeric, red chili powder, coriander powder, and salt. Cook till the tomatoes are soft and oil starts to separate.
Add mutton pieces and mix well to coat with the masala. Cook on medium heat for 7–10 minutes until the mutton begins to brown slightly.
Add 2 cups of water (or stock). If using a pressure cooker, close the lid and cook for 3–4 whistles. If slow cooking, cover and let simmer for 45–60 minutes, stirring occasionally.
Add garam masala and any optional vegetables. Cook for another 10–15 minutes until everything is tender. Garnish with fresh coriander.
